Thomas A. Boufford

Mr. Thomas Boufford is manager of Global Technical Affairs for the Food and Beverage Division of Ecolab, Inc., a world leader in premium commercial cleaning and sanitizing systems. A recognized food plant sanitation expert and developer of sanitizing agents, he holds two patents for the development of antimicrobial compounds.

A graduate of the University of Minnesota, Mr. Boufford served as a senior food technologist and research microbiologist at Ralston Purina before joining Ecolab in 1982.

He has held a number of technical and research positions at Ecolab, and in his present role provides technical assistance to help the company’s customers solve their product safety and quality issues. Mr. Boufford has been a Silliker short course instructor for the past five years.

An active member of several professional organizations, including the American Society for Microbiology, Institute of Food Technologists, and International Association for Food Protection, Mr. Boufford also serves on the editorial board of IAFP’s “Sanitation” trade journal.

Donald A. Corlett, Ph.D.

The author of the highly respected book, “HACCP User’s Manual,” Dr. Donald A. Corlett is an internationally recognized HACCP authority with nearly two decades of hands-on experience in teaching, consulting, and verification of food HACCP systems.

A former member of the highly influential U.S. National Advisory Committee on Microbiological Criteria for Foods (NACMCF), Dr. Corlett served as chairman of the ad-hoc working group that developed the committee’s first comprehensive HACCP guidelines.

Through Corlett Food Consulting Service, his Concord, Calif.-based firm, he has developed and conducted HACCP educational programs for food companies across North America. He joined Silliker as a consultant and short course instructor in 1999.

In addition to his book, he has authored several peer reviewed publications on HACCP and is a highly sought after speaker at industry conferences and tradeshows. Dr. Corlett is a certified instructor by the International HACCP Alliance and National Seafood HACCP Alliance.

Ann Marie McNamara, Ph.D.

Dr. Ann Marie McNamara is Vice President of Food Safety and Scientific Affairs for Silliker, Inc. and possesses over 15 years of food industry and regulatory experience. She is responsible for developing risk management and safety programs for Silliker clients and supports the development of public and customized training programs.

Prior to joining the Illinois-based organization earlier this year, Dr. McNamara was Corporate Vice President of Food Safety and Technology for the Sara Lee Corporation. From 1992 to 1999, she served as Director of Microbiology for the Office of Public Health and Science (USDA FSIS). Dr. McNamara directed and coordinated scientific and research activities at the agency and played an influential role in developing a host of safety initiatives, including the “Pathogen Reduction and HACCP Rule."

The author of several articles on the microbiological safety of food, Dr. McNamara is a highly respected industry consultant and frequent lecturer at technical symposiums and conferences. She is Chairman of the Microbiology Division of the Institute of Food Technologists and a founding member of the Food System Biosecurity Leadership Group.
